This dish is great for Brunch or Dinner. You can spice it up by adding your favorite toppings and really making it your own. Not to mention it is super quick and easy!

- 1 tsp. olive oil
- 1 onion, chopped
- 1 medium tomato, diced
- 1 large garlic clove, minced
- 2 Tbsp. chopped diced green chiles (in a can)
- 1/2 tsp cumin
- 1/4 tsp. chili powder
- 1/8 tsp cayenne
- 1 can black beans
- 2 large eggs
- 2 corn tortillas
Toppings: (Optional..but believe me, you should add some toppings!)
- chopped cilantro
- avocado slices
- shredded cheese (any kind will work, but we use pepper jack)
- sour cream
- hot sauce (we put Sriracha on everything!)
Cook the beans first. This is just a doctored up version of canned black beans. If you have your favorite way of making black beans, go for it, but this is what we do:
- Heat 1/2 tsp. oil in a small saucepan. Sauté 1/2 of the chopped onion with the garlic clove. Cook for about 3 minutes until soft.
- Pour in the can of beans. Then add 1/4 tsp. cumin, 1/4 tsp. chili powder, and 1/8 tsp cayenne pepper(to taste). We also add a dash of hot sauce and a little freshly chopped cilantro, but you can omit that if you'd like.
- Bring to a simmer, then reduce heat to low to keep warm until everything else is ready. The beans are the base of your dish.
4. Heat 1/2 tsp. of the oil in a skillet. Add the other half of the chopped onion and cook for about a minute.
5. Then add tomatoes, green chilies, the other 1/4 teaspoon of cumin, and pinch of salt and pepper. Cook for about 3 mins, then turn heat to low and keep warm.

6. Next cook the eggs how you like them. I like mine over easy (runny) so I just cook them on each side for a minute or so. Sprinkle salt and pepper on each side. (I also sprayed the pan with cooking spray before). Set eggs aside to heat tortillas on same pan.
7. Warm tortillas by placing them on hot skillet over medium heat for about a minute on each side (or until it starts to get a little crispy and some air pockets form).
8. Now its time to build the master piece:
First plate your beans, then place the tortilla on top of the beans followed by the egg and topped with the tomato mixture. Then add your cheese and all that good stuff!
