Ingredients:
Butter (a few teaspoons, add to the pan when needed)
1 egg
1/2 cup whole milk
1/2 teaspoon vanilla extract
a pinch of salt
4 large four tortillas
1 teaspoon cinnamon
1 1/2 teaspoon sugar
1 cup strawberries, sliced
1 cup ricotta cheese
powdered sugar, whipped cream, and maple syrup for topping.
1. Heat oven to 200 degrees and put 1 teaspoon of butter into a large skillet over low heat. While the butter melts, crack 1 egg into a pan large enough to dip the tortillas in . Add 1/2 cup of milk, 1/2 teaspoon vanilla, and a pinch of salt to the egg and whisk it together. In a small bowl, mix the cinnamon and sugar together.
2. Dip a tortilla into the egg mixture, coating both sides, then lay it flat in the skillet and raise heat to medium. Cook, turning once until golden and crisp on both sides, but still pliable. This should take about 1-2 mins per side. Then sprinkle each side of the cooked tortillas with the cinnamon sugar. Place the tortilla on a baking sheet and keep warm in the oven while you cook the others. Do the same with the other 3 tortillas. (add more butter as needed).
3. Spread 1/4 cup ricotta cheese on each tortilla and then add the strawberries. Roll up each tortilla, top with more cinnamon sugar, powdered sugar, more strawberries, whipped cream, and serve with a side of maple syrup.
